"Investment": Vitamix

I bought the Vitamix 5200 Classic Blender by +Vitamix.  I've tried other blenders in the past, but they couldn't handle some food items (ice, peanuts, etc.) and they were so hard to clean.  I absolutely love my Vitamix.  I haven't had a single problem.  And you clean it by putting warm, soapy water in the blender and running it for about a minute.  So easy!

The longer I have the blender, the more uses I find for it.  I usually use it to make smoothies.  But I've made pesto sauce and peanut butter in it.  The next thing I want to make is homemade soup - it is supposed to heat the soup for you as it blends!



Homemade Peanut Butter

I followed a recipe that was included with my Vitamix.  However, I did not follow the directions exactly.  All you need is unsalted peanuts and honey roasted peanuts!  Put about twice as many unsalted peanuts as honey roasted peanuts to make the amount of peanut butter you'd like.  Then blend until the peanut butter is moving freely through the blender.  It'll be warm when you are done!

Lettuce Mini Ice Cubes

The lettuce in my fridge was about to go bad, and I couldn't bear throwing it away.  I researched a bit, and there are several ways to freeze lettuce.

Keep in mind that it is not recommended to freeze lettuce (because of the high water content, the cell walls can break during the freezing process... leading to mushy lettuce when defrosted).  However, because I planned to just use the lettuce in smoothies, I wasn't concerned about this.

I decided to freeze the lettuce in ice cubes because it would be the perfect form to add to smoothies! There are many recipes and suggestions for doing so online.  I followed the recommendations which can be found here.  The ice cubes are kind of crazy looking and smell a little funny.  But they are a great addition to any smoothie.
